Acetilpiruvatna hidrolaza (EC 3.7.1.6) je enzim sa sistematskim imenom 2,4-dioksopentanoat acetilhidrolaza.[1] Ovaj enzim katalizuje sledeću hemijsku reakciju

acetilpiruvat + H2O {\displaystyle \rightleftharpoons } acetat + piruvat

Ovaj enzim je veoma specifičan.
